Loaded Tomato, Bacon & Feta Focaccia

A quick and easy yeasted bread that comes together in a few hours baked in your Krustic Dutch oven. The secret to good focaccia is making sure there’s plenty of oil drizzled all over the bread and you make nice deep dimples that can fill up with flavorful toppings.

INGREDIENTS:

Bread:

  • 450g white bread flour, plus extra for dusting
  • 8g (1 sachet) active dried yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 300mL lukewarm water

Toppings:

  • 1 cup diced bacon pieces, cooked until crisp and drained
  • ½ cup sun-dried tomato pesto
  • ¼ cup oil
  • 200g Danish feta, crumbled

METHOD:

  1. In a large mixing bowl, combine the water and yeast and leave aside to froth for 5 minutes.
  2. Add the flour, sugar, and salt and mix with a wooden spoon until the dough comes together in a ball. Turn out onto a counter or board and knead for approximately 10 minutes until the dough is smooth and soft.
  3. Place the dough in a large plastic container, greased with oil, and leave to prove for 30-45 minutes until puffed up and doubled in size.
  4. Preheat the oven to 425°F.
  5. Place the Silicone Transfer Mat into the base of your Krustic Dutch oven. Tip dough on top of the mat and press out to the edges.
  6. Add toppings: gently spread the sun-dried tomato pesto over the dough, then sprinkle over the bacon and the feta.
  7. Leave to prove for another 15 minutes.
  8. Drizzle the oil over top of the dough, then using your fingers, press relatively deep dimples into the dough, making sure not to make holes in the bottom of the dough.
  9. Bake with the lid on for 15 minutes then remove, and continue cooking for a further 10-15 minutes until the toppings are golden and the bread is springy when pressed.
  10. Leave to cool 15 minutes before cutting.

NOTES:

  • Switch up the toppings for your favorite; there’s really no limit to the toppings you can make with this recipe. Here are some other ideas:
  • Cheeseburger Loaded Focaccia: Tomato sauce, mustard, beef and cheese
  • Garlic and Herb: slow roast garlic in the oven then squeeze the cloves out, then add to bread with plenty of fresh thyme and/or rosemary
  • Garden Veg: Top with leafy greens, or chopped up grilled vege (zucchini, tomato, spinach, fresh herbs like basil)
