Soft Garlic Butter Dinner Rolls

INGREDIENTS:

  • 100 grams or sourdough discard, unfed
  • 240 grams water, warm to the touch
  • 2 tablespoons instant yeast
  • 1 tablespoon granulated sugar
  • 525 grams bread or all purpose flour
  • 1 large egg, for brushing
  • 2 tsp cooking or sea salt
  • 2 cloves garlic, crushed
  • 2 tablespoons resh rosemary leaves, chopped finely plus extra for garnish
  • 50 grams butter, melted

METHOD:

  1. In a large bowl, mix the warm water, yeast, sourdough starterand sugar together. Set aside for 10 minutes until frothy.
  2. Add the flour and rosemary and mis to form a dough. Turn out onto a clean board and knead for 2-3 minutes until soft.
  3. Place back in the bowl and cover with a tea towel. Leave in a warm place to rise for 1 hour or until approximately doubled in size.
  4. Tip dough onto board and cut into 8 equal pieces. Form each one into a ball and round with your hand against the bench to form a smooth surface.
  5. Preheat oven to 350F.
  6. Place each ball into the Krustic and place lid on. Leave to rise a further 40 minutes while the oven is preheating.
  7. Whisk the egg with a fork then spoon gently over the top of the rolls. Sprinkle with seeds and bake 20-30 minutes or until perfectly golden brown.
  8. Mix the melted butter with the garlic and a pinch of sea salt. Brush over the hot roll and serve warm.

NOTES:

  • Sub the rosemary for thyme or leave out if you prefer. You can also top with different seeds or toppings of choice.
