Irish Soda Bread Loaf

INGREDIENTS:

  • 3 1/4 cups all-purpose flour
  • 3 tablespoons brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 5 tablespoons unsalted butter, cold
  • ½ cup rolled oats
  • ½ cup milk chocolate chips
  • ½ cup dried cranberries
  • 1 ½ cups buttermilk

METHOD:

  1. Preheat oven to 425F. Add krustic to preheat about 30 minutes before you want to bake.
  2. Mix flour, brown sugar, baking soda, and salt together in a large bowl.
  3. Add cold butter into the flour mix, and rub with your fingertips until it’s broken up nad dispersed throughout the dough.
  4. Add the chocolate chips and cranberries and stir through.
  5. Add the buttermilk and mix to form a stiff dough. Shape into a rough circle with your hands.
  6. Slice an ‘X’ into the top, place into the preheated krustic and bake for 15 minutes. Remove lid and bake a further 5-10 minutes to get perfectly golden brown.

NOTES:

  • If you have an excess of sourdough discard you want to use up, add 1 cup to the buttermilk and mix before combining with the dry ingredients. Increase flour by 1 or 2 tablespoons if dough is too wet.
  • To slice: use a serrated knife to cut into wedges or thick slices
