Irish Soda Bread Loaf

A quick and easy bread that uses baking soda to leaven, and is ready in under an hour! Baked in your Krustic Dutch Oven, it’s endlessly customizable. Add your favorite mix-ins like nuts, seeds, white chocolate, or dried fruit.

INGREDIENTS:

  • 3 ¼ cups all-purpose flour
  • 3 tablespoons brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 5 tablespoons unsalted butter, cold
  • 1 ½ cups buttermilk
  • ½ cup rolled oats
  • ½ cup milk chocolate chips
  • ½ cup dried cranberries

METHOD:

  1. Preheat the oven to 425°F. Place your Krustic Dutch Oven inside to preheat about 30 minutes before you want to bake.
  2. Mix flour, oats, brown sugar, baking soda, and salt together in a large bowl.
  3. Add cold butter into the flour mix, and rub with your fingertips until it’s broken up and dispersed throughout the mixture.
  4. Add the chocolate chips and cranberries and stir through.
  5. Add the buttermilk and mix to form a stiff dough. Shape into a rough circle with your hands.
  6. Slice an ‘X’ into the top, place into the preheated Dutch oven and bake for 15 minutes. Remove the lid and bake a further 10 minutes until perfectly golden brown and the bottom sounds hollow when tapped.

NOTES:

  • If the top is browning too quickly, loosely cover with foil for the final part of baking.
  • If you have an excess of sourdough discard you want to use up, add 1 cup to the buttermilk and mix before combining with the dry ingredients. Increase flour by 1 or 2 tablespoons if dough is too wet.
  • To slice: use a serrated knife to cut into wedges or thick slices.
