Pour the full packet of dry starter into a clean glass jar. This will be your starter’s new home.
Add 32g white flour, 8g whole wheat flour, and 40g water. Stir well until the mixture is fully combined.
Cover the jar loosely and leave it at room temperature for 12 hours. This is where the magic begins.
After 12 hours, discard most of the starter and leave just 2–3 tablespoons in the jar. Feed it again with the same flour and water mix.
Repeat this discard-and-feed process every 12 hours until your starter becomes bubbly, fragrant, and ready to rise.
