Pink and White Chocolate Valentine's Day Bread

This bread has a beautiful pink hue and delicate white chocolate flavor, with a slightly soft crust and a gorgeous pattern.

INGREDIENTS:

  • 125 grams bubbly active sourdough starter
  • 325 grams water
  • 15 grams white sugar
  • 10 grams salt
  • 500 grams bread flour
  • 90 grams finely chopped white chocolate
  • 2-3 drops of liquid or gel food coloring, adjust as needed

METHOD:

  1. Feed starter night before baking. When ready to make dough, measure out 125 grams of starter. Add the water, food coloring and mix to combine. Add the flour, sugar and salt and mix to form a rough dough. Use wet hands to do a few stretch and folds to make a cohesive ball. Cover and rest 40 minutes. Image
  2. Perform first set of stretch and folds, then cover and rest a further 30 minutes. Before the second set of stretch and folds, add the white chocolate and proceed with folds to incorporate into the dough. Do one final set of stretch and folds after 30 minutes then bulk ferment on the bench at room temperature until risen by approximately 80-90%. Image
  3. Preshape: Tip dough out onto a clean surface and stretch out slightly. Gather all sides in to create a ball. Flip over so the smooth side is up, and rest covered with a towel for 20 minutes. Image
  4. Shape: Flip dough over, so it is smooth side down and stretch out into a rectangle. Fold the top third down and the bottom third up to create a log. Roll log up to form a tight ball. Increase tension by pushing and pulling against the bench with your hands. Place into a banneton, cover and place in fridge 8+ hours or overnight. Image
  5. When ready to Bake, preheat oven to 450 with your Krustic Dutch oven inside for 30 minutes. Remove dough from fridge and flip out onto the Silicone Transfer Mat and score. Bake, covered for 30 minutes. Remove lid and bake 20-25 minutes until perfectly golden brown and crispy. Image
  6. Cool at least 1 hour before slicing.

NOTES:

  • The sugar and white chocolate additions make the bread slightly softer than traditional sourdough, and makes the perfect sweet treat for valentines day breakfast. 
  • Use any kind of chocolate in place of white. 
  • You can also color the loaf with dragonfruit or strawberry powders but it may not be as vibrant.
