Candied Yam Sourdough

A festive, slightly sweet sourdough loaf studded with caramelized marshmallows, spiced yams, and fresh thyme. Soft, chewy, and subtly spiced, it’s perfect for a holiday breakfast or as a comforting dessert.

INGREDIENTS:

  • 100g active sourdough starter
  • 360g water
  • 500g bread flour
  • 10g salt
  • 125g pureed/mashed cooked sweet potato or yams
  • 5g garam masala
  • 5g cinnamon
  • Pinch of nutmeg
  • 50g mini marshmallows
  • Handful of freshly picked thyme leaves

METHOD:

  1. Mix together the sourdough starter and water until combined. Add the flour and the salt, mix into a shaggy dough and cover. Rest 30 minutes.
  2. Using your hands, pull the dough together into a rough ball shape. Pick up a large section and knead against the side of the bowl for 2-3 minutes to help the gluten develop. Cover and leave a further 30 minutes.
  3. Coil folds or stretch-and-folds: do 2-3 sets of these over 2 hours as the dough bulk ferments. Continue to bulk ferment until the dough has domed on top and has scattered bubbles across the surface.
  4. Mix the pureed sweet potatoes or yam with the spices.
  5. Tip dough onto a clean surface and gently stretch out into a rectangle.
  6. Spread ⅔ of the yam mixture over the dough then top with the thyme leaves and half the mini marshmallows. Fold up the bottom and top thirds to form a log. Add remaining yams and marshmallows.
  7. Roll the log into a tight batard shape and place into your seasoned Wood Pulp Banneton. Cover and refrigerate overnight.
  8. When ready to bake, preheat your Krustic Dutch oven at 450°F for 45 minutes. Tip dough onto the Silicone Transfer Mat and score bread down the center. Place it in the base of the Dutch oven and top with the lid. Bake covered for 30 minutes. Remove lid and bake until golden brown. Because of the marshmallows the crust caramelizes beautifully, but if you like a softer crust, place the Dutch oven on a baking tray before baking.
  9. Cool completely before slicing and serving at your next Thanksgiving gathering.

NOTES:

  • If you prefer a slightly sweeter loaf, you can add 25g of sugar at the mixing stage. The mini marshmallows and spices give this a deep earthy flavor reminiscent of the traditional candied yams.
  • Using sweet potato gives this a beautiful orange-tinged color, whereas using traditional yams will yield a more natural-colored crust.
