Soft Garlic Butter Dinner Rolls

Perfect for the Thanksgiving table or to add to any cozy dinner, baked in your Krustic Dutch oven. Use up extra sourdough discard and yeast to have these on the table in under 90 minutes. Or make a sourdough version if you have extra time!

INGREDIENTS:

  • 100g of sourdough discard
  • 240g water, warm to the touch
  • 1 tablespoon instant yeast
  • 15g sugar
  • 525g bread or all-purpose flour
  • 1 large egg, for brushing
  • 10g cooking or sea salt
  • 2 cloves garlic, crushed
  • 2 tablespoons fresh rosemary leaves, chopped finely plus extra for garnish
  • 50g butter, melted
  • Sesame seeds for sprinkling (optional)

METHOD:

  1. In a large bowl, mix the warm water, yeast, sourdough discard, and sugar together. Set aside for 10 minutes until frothy.
  2. Add the flour, salt, and rosemary and mix to form a dough. Turn out onto a clean board and knead for 2-3 minutes until soft.
  3. Place back in the bowl and cover with a tea towel. Leave in a warm place to rise for 1 hour or until approximately doubled in size.
  4. Tip dough onto board and cut into 8 equal pieces. Form each one into a ball and round with your hand against the bench to form a smooth surface.
  5. Preheat the oven to 350°F.
  6. Place each ball into your Krustic Dutch oven and place the lid on. Leave to rise a further 40 minutes while the oven is preheating.
  7. Whisk the egg with a fork then spoon gently over the top of the rolls. Sprinkle with seeds (if using) and replace the Dutch oven lid.
  8. Bake 20-30 minutes, removing the lid for final 10 minutes of baking, to brown the top of the rolls. Remove from oven.
  9. Mix the melted butter with the garlic and a pinch of sea salt. Brush over the hot rolls and serve warm.

NOTES:

  • Sub the rosemary for thyme or leave out if you prefer. You can also top with different seeds or toppings of choice.
